Early Life and Education
Steven Dilley was born in Willmar to Virgil and Amy (Bergum) Dilley and attended New London High School before going on to earn a degree in social work from Saint Thomas University. Steven’s hobbies included bowhunting and spending time with family.
He is an avid reader, having contributed essays to British Journal for the History and Philosophy of Science, Studies in the History and Philosophy of Biology and other journals. His research interests focus on science-theology-philosophy triads and Darwinian evolution.
Dilley began Bufalina without prior restaurant industry experience other than a month spent eating pizza and drinking wine in Naples. Since then, he has overseen both locations’ extensive wine programs (Food & Wine honored him as their 2017 Sommelier of the Year) as well as its Stefano Ferrara custom ovens at both locations.

Steven Dilley is widely respected for his expertise in financial, accounting and tax issues faced by closely held businesses. His father Frank Dilley earned both a BFA from Boston University (’49) and MA degree (’56) before passing them down to his three other children – Ann Dilley White from UCLA received her BA degree (in 1946) and Jim from Texas received both their degrees (’55-56). Steven has published numerous articles related to these subjects while his firm provides continuing professional education materials as well as seminars to accountants and attorneys across America.
Dilley established Bufalina Pizza without prior experience in 2013 and quickly rose to become one of Austin’s best-known wine experts (Food & Wine named him their 2017 Sommelier of the Year). He oversees Bufalina Due’s Burnet Road outpost, curates their extensive wine list, and is also an accomplished woodworker with pieces on display both at Bufalina Due and his home.
Personal Life
Steven Dilley excitedly holds out a handful of what appear to be dusty tan rocks. “These just arrived,” he tells us with enthusiasm, “they left Piedmont just two days ago!” These dusty-brown gems are aromatic white truffles which diners at Bufalina Neapolitan Pizzeria can order up to six grams shaved onto their pizzas.
Restaurant industry challenges such as labor and supply issues have proven challenging for Dilley and his team, yet they continue to prosper despite this hurdle. Dilley enjoys snow skiing, traveling and spending time with his granddaughter.
As part of his community involvement, he holds memberships in Masonic lodge, chapter and commandery. Additionally, he belongs to Elks Lodge and Roswell Country Club as well as being a founding member of Rotary Club of Roswell as a charter member and sits on its Board of Directors as an Embalmer.
Net Worth
As a graduate of Wittenberg University with both a theatre and interdisciplinary studies major degree, Dilley served on the Wittmen Crew, wrote for The Torch newspaper and performed professionally before working as both musician and theatre teacher. Since graduating he has held sales leadership roles with two real estate technology companies in Cleveland, Ohio: MRI Systems Inc and RealPromise Intl Inc.
He practices civil law in New Mexico and his practice specializes in civil litigation, estate planning and general business issues.
